Job Title: Butcher


Job Summary: To perform the selection, cutting and slicing of carcasses into wholesale and retail cuts and provides excellent service and quality meat products to customers.


Key Responsibilities:

FRESH QUALITY MEAT/POULTRY

  • Receives, selects and inspects incoming meat products for quality and accuracy.
  • Trims unnecessary fats in the carcass and facilitates return to suppliers in coordination with merchandising.
  • Processes carcasses into primary and secondary cuts for sale and display.
  • Marinates meats, value-added and ready-to-cook dishes according to established standards.
  • Prepares reports on bad orders and disposal to superiors.
  • Endorses Return of bad orders to suppliers during pick-up.
  • Brings products to the freezer/chillers following the ‘first-in, first-out’ procedure.
  • Regularly monitors the proper temperature of freezer and chiller.

 

CUSTOMER SERVICE

  • Assists customers in their purchases at the meat and poultry section in a friendly manner.
  • Slices retail cuts meat further into individual size servings or in a manner requested by the customer.
  • Pack and store products for display and sale.
  • Weighs sold meat products for appropriate and accurate price tagging.
  • Provides proactive advise to customers about alternative cuts, cooking methods or nutritional aspects of meat.
  • Maintains cleanliness and orderliness in assigned workstation, backroom, storage and surrounding areas before, during and after store operations in compliance to health and sanitary guidelines.

 

STOCK MONITORING & REPLENISHMENT

  • Replenishes, creates and maintains meat displays of all product mix to minimize waste.
  • Monitors acceptable inventory level in the display and storage areas.
  • Monitors fast and slow moving SKUs to provide the superior basis for product re-ordering in coordination with merchandising.
  • Disposes bad order products according to standard procedures in disposal.
  • Performs other related duties as may be assigned either in support of divisional goal attainment or for own personal or professional training, education and development as planned by the superior.

 

Qualifications:


EDUCATION/PROFESSIONAL EXPERIENCE

  • At least Senior High School graduate with Vocational training or at least 2 years college education.
  • With prior meat cutting experience (both local and imported) is a must.
